dcterms.abstract近年、香港の胃袋を日本のラーメンや寿司が席巻している。日本食が現在のように人気となった歴史的経緯を、「出前一丁」と「サーモン寿司」という二つの具体例から検証する。香港では戦前から現在まで、その時ごとの日本が記憶され、その時々の日本食が受容されてきた。香港の日本食は日本の日本食に常に影響されながらも独自の伝統を築いて来ている。en_US
