Abstract: The invention provides a method for wrapping fish oil with zein. The method comprises the following steps: S1, dissolving zein in ethanol water, and stirring till the ethanol water is homogeneous and transparent to prepare a zein solution; S2, dissolving fish oil in ethanol water, and stirring till the ethanol water is homogeneous and transparent to prepare a fish oil solution; S3, mixing the zein solution and the fish oil solution; and S4, drying the mixture. According to the method, fish oil is wrapped through evaporation self-assembly of zein to be better protected, reduction of both nutrition and medicinal value of fish oil is avoided, the flavor of fish oil is eliminated, and the solubility property of fish oil is changed. Meanwhile, fish oil can be wrapped without complicated equipment, so that the preparation method is simple. The obtained fish oil can be widely applied to the fields of food, medicines and the like.
本发明提供一种利用玉米醇溶蛋白包裹鱼油的方法,包括如下步骤:S1、将玉米醇溶蛋白溶解于乙醇水溶液中,搅拌至溶液均匀透明,从而制成玉米醇溶蛋白溶液;S2、将鱼油溶解于乙醇水溶液中,搅拌至溶液均匀透明,从而制成鱼油溶液;S3、将所述玉米醇溶蛋白溶液与所述鱼油溶液混合;S4、干燥。通过用玉米醇溶蛋白蒸发自组装对鱼油进行包裹,可以对鱼油进行更好的保护,避免鱼油营养与药用价值的降低,消除鱼油的味道,改变鱼油的溶解性质,同时,对鱼油的包裹过程中无需使用复杂设备,制备方法简单,得到的产品可以广泛的应用于食品、医药等领域。
